Our Fave Easy Peanut Butter Fudge Brownies Recipe

Fact: We all need a satisfying brownie recipe in our back pockets for impromptu movie nights (or just to elevate another Tuesday lunch at the office), and we’ve found just the one. This deliciously simple brownie recipe not only offers peanut butter swirls and a perfectly fudgy texture, but it was created by dietitian, personal trainer, and cookbook author Rachael DeVaux of the popular Instagram account @rachaelsgoodeats, so it’s loaded with nourishing ingredients.

While these peanut butter fudge brownies are free from gluten, dairy, and refined sugar, rest assured that they’re made with accessible ingredients that you can find at just about any supermarket these days. Best part? If you’re already into gluten-free baking, you probably have all these ingredients waiting for you in the kitchen.

DeVaux uses a base mixture of almond flour and other gluten-free flours here. (Keep in mind that you can easily make your own almond flour by blitzing almonds in a high-speed blender until they achieve a flour-like consistency, followed by gluten-free oats.) Her recipe uses coconut sugar for a touch of sweet, too.

While these peanut butter fudge brownies are dairy-free, you can easily swap in any kind of milk you like and whatever type of chocolate chips (or chunks!) you have on hand to keep things simple without altering texture or taste. If you’re not an avocado oil devotee, you can try melted butter, coconut oil, or a mild olive oil in its place, but it’s important to remember that each has their own flavor profile that they will bring to the recipe. Rachael DeVaux’s Peanut Butter Fudge Brownies Recipe

Makes 16 brownies

Ingredients
3 pasture-raised eggs (other types will also work)
1/3 cup unsweetened almond milk
1/3 cup avocado oil
1 tsp vanilla extract
1/4 cup chocolate chips, melted and cooled
1/2 cup coconut sugar
1 cup almond flour
1/2 cup paleo or gluten-free flour
1/4 cup cacao powder
1/2 tsp baking powder
Pinch sea salt
1/3 cup dairy-free chocolate chips
1/3 cup unsweetened peanut butter

Directions
1. Preheat the oven to 350° F.

2. Whisk together wet ingredients, then stir in dry ingredients, saving the chocolate chips to fold in last.

3. Pour into a parchment paper covered square dish. Add spoonfuls of peanut butter scattered on top, then use a toothpick or skewer to swirl the pb into the surface of the brownies.

4. Bake for 18-20 minutes, then remove and let cool for 15-20 minutes before digging in. Sprinkle with sea salt and serve.

Tips for storage and freezing your peanut butter fudge brownies

We love that this recipe is simple, made with wholesome ingredients, and doesn’t sacrifice on flavor whatsoever. It can just as easily come together on a busy weeknight or for a dinner party you’ve been planning all week. Brownies can store well for up to five days in an airtight container, and you can even freeze them for up to three months if you first wrap them in a layer of plastic wrap and foil first (be sure to slice them before freezing). They’ll take about two to three hours to defrost, so you can pop one in your reusable lunch tote in the morning to have a sweet treat ready by lunch.
